Today I have a recipe for you, that is very filling and healthy, I talk about goulash. Actually goulash fits better in the colder months, but since I live vegan I had no more goulash eaten. So I wanted to try a vegan alternative, that tastes the same hearty and savory, but is completely free of animal products.
The recipe is very easy to prepare and you only need the following ingredients:
-2 Peppers (color doesn´t matter, I have decided for red and orange)
-3 Small jalapenos
-1 Large sweet potato
-2-3 Large or several small potatoes
-two small zucchini
-1 Large onion
-1 garlic clove
-Spices (Paprika (noble sweet), salt, pepper, cumin, basil)
-3 Tablespoons tomato paste
Preparation vegan goulash:
First, cut all ingredients into bite-sized pieces and chop the onion small. Then heat everything in a saucepan over high heat in olive oil and it fry well. The resulting roasted aromas make the stew very tasty. If all is well seared pour water over the veggies so that everything is covered. Now add the tomato paste and spices and let cook it on medium heat.
The longer you cook the the goulash, the tastier it is.
